These artisan chorizo are made from cuts of hand-trimmed leg meat, with some belly meat. They are made to a traditional Riojan recipe with mild pimentón de la Vera D.O.P., garlic, sea salt and without artificial additives, allowing the flavour of the meat to be fully appreciated. Natural casing is used and the curing process is slow and careful, allowing the flavours to fully develop.
This chorizo is cured for 1 month and can be cooked or just sliced and eaten without cooking - great for a picnic or with a glass of wine. Although this chorizo can be used for cooking, we usually prefer using raw cooking chorizo to give lots of added flavour as it cooks.
Also available in a slightly spicy (picante) version. Ready to eat and Gluten-Free.
