Carnaroli Rice - from Gazzani who have been producing rice since 1648 and still use their ancient millstone during production. This carnaroli is a 'super-fino' rice, which has an accentuated flavour and robust texture, perfect for fish and seafood risottos, or rice salads.
Carnaroli rice absorbs less liquid when cooking than other risotto rices so retains a firm, al dente, point in the middle. Larger, longer grain than our Vialone Rice, with a cooking time of 18 minutes on a low heat or little less for al dente.
Carnaroli has a more definite cereal flavour whereas Vialone Nano has a subtler, herb flavour. Its grains remain separate in cooking, making it suitable for risottos where a more definite rice texture is preferred. Both carnaroli and vialone nano, as well as being the best rice for risotto, are very versatile in the kitchen and are good in soups, cold in any salad or steamed for typical oriental dishes (Indian or Chinese).
This Carnaroli rice comes from the Verona area - a very old-established area for rice cultivation where the paddy fields are watered by alpine springs. Pesticides are not used. Carp and other species of fish thrive in the clean waters.
