Confit de Canard

Confit de canard,  the south west France speciality - duck leg pieces preserved in duck fat.

A great storecupboard standby when you want to make something really tasty in very little time. Simply warm slightly to melt the duck fat, then drain the fat from the meat and reserve (it make delicious roast potatoes). Then crisp up the duck in a hot oven. Try serving with spinach or red cabbage or a simple salad - delicious!
