Description
Cotechino - this finest quality, artisan-made Cotechino is a speciality of Modena dating back to the 16th century but now very popular throughout Italy. Cotechino is a traditional large sausage filled with 100% pork mince seasoned with spices (the same stuffing as Zampone).
Pre-cooked and packed in aluminium foil simply reheat for 45 minutes and then serve with Umbrian lentils, or butterbeans in a tomato sauce. Also delicious served with mostarda (mustard fruits).
