Dried Mulato Chillies - Browny black in colour, the mulato is related to the ancho chile. It has a deeper flavour of deep dried fruit and tobacco with a hint of liquorice and mulatos are part of the "Holy Trinity" of chiles, the other 2 being anchos and pasillas.

To use: wipe clean, remove the stem and shalke out the seeds. Open flat and toast briefly ina dry frying pan until nutty smelling. Soak in just boiled water for 15 minutes, drain and puree then add the puree to soups, stews, sauces and salsas and most famously to mole sauces.
