English Goose Fat

Goose fat is a secret weapon in your kitchen cupboard, and too nice to just be saved for Christmas. Perhaps not the healthiest of ingredients but it makes the best roast potatoes. Also adds a richness to omelettes and a delicious crispy edge to fried eggs.

Goose fat has a rich, silky texture and a subtle savoury flavour. When refrigerated goose fat is a solid fat, but it is fairly liquid at room temperature. It has a high burning (or smoke) point which means foods can be cooked at a high temperature without the fat burning or breaking down.
