Freekeh - also known as Farikah or Frikkeh. Roasted green wheat that is widely used in Middle Eastern and North African cooking. The wheat is harvested when the grains are still soft and yellow, and then dried in the sun before being roasted.
Freekeh looks a little like green bulghar wheat and can be prepared and served like rice or used in soups and stuffings.
