Finely sliced Spanish Serrano Ham - the minimum curing time for serrano hams according to Spanish regulations is 36 weeks, but this ham from Girona in Catalunya is cured for 9 months. The result is a mild and savoury ham which is very different from mass produced, rapidly cured serrano hams.
