Jamon Iberico Reserva (Iberian Ham, Pata Negra) - 80g
Jamon Iberico - made from the black-footed (pata negra) Iberian pigs that roam freely and feed on acorns, herbs and other natural products of the pasture lands. Made by Consorcio de Jabugo, an artisan producer and one of the finest producers of Jamon Iberico.
The hams are cured in cold mountain air in natural curing sheds and then slowly matured for up to 24 months in cellars with sea salt being the only added ingredient.
This ham has a soft texture and marble-like appearance, veined with fluid and aromatic fat that tasted in short and thin slices simply melts in the mouth. The nuttiness of the acorns comes through in the meat and fat, and even better the fat is actually good for you as it is rich in oleic acid - just like olive oil!
