La Brujula sardinillas (small sardines) in olive oil, from the coastal waters of Galicia, are only fished in season and processed from fresh, not frozen, fish. The best of the catch is selected before being cleaned by hand then cooked in a traditional grill oven, preserving the delicate flavour and meaty texture.
Fished using purse seine nets. The main part of the fishing operation consists in identifying the schools of fish, using sonar, wave and water colour technology. The specie and the size of the school is then evaluated to ensure that only the desired type and size of fish is selected. The purse seine net is then used to surround the school of fish. This type of net does not impact on the ocean floor because the net is shorter than the water depth. In Galicia nets do not go deeper than 30m. Unlike other forms of fishing, such as gill nets, it is also impossible to trap marine mammal by-catch, such as dolphins.
