Lomo (Cured Spanish Pork Loin)
Lomo - from Teruel in Aragon, this lean Spanish pork loin is cured (like parma ham or serrano ham), and then traditionally sliced thinly. This deliciously sweet cut of cured pork is rubbed with oregano, garlic and paprika.
Just serve at room temperature accompanied by a glass of wine or chilled Fino sherry - one of life's simple pleasures! Try squeezing a little lemon juice over the slices, drizzling with olive oil and adding a grind of black pepper, or this lomo is delicious in an indulgent sandwich.
