Yorkshire Parkin varies across the region depending usually on the family recipes used but we believe that Lottie Shaw makes the best Parkin in Yorkshire. Her recipe is over 100 years old and tastes like Grandma used to make.
One of the Seriously Good things about our Lottie Shaw's Yorkshire Parkin is that the treacle in the recipe caramelises and hardens during baking, so before it leaves the bakery it is kept for a few days to allow it to "come again" - this is where the caramel softens giving each piece the perfect crumbly stickiness.
Traditionally enjoyed throughout the country on Bonfire Night and throughout the year in Yorkshire, Parkin works brilliantly with Strawberries and fresh Cream and in Winter hot with custard or Caramel Sauce and any day with a Pot of Tea.
