Mojama, air cured tuna loin is made from naturally air dried tuna in Barbate on the Atlantic coast of Andalucía in Spain.
Mojama is delicious thinly sliced as a canapé or starter, or as a garnish to cooked fish. The curing intensifies the flavour, which is salty and meaty rather than strongly fishy.
Expensive by the nature of its production, as the drying reduces the size of the fillet, however the intensity of the flavour compensates and means little is required. Through the drying process, nutrients in the tuna are more concentrated as well as the flavour.
Serve with ripe pears dressed with olive oil, or grate over spaghetti. Drink with a cold beer to balance the saltiness. Also fantastic with caramelised apples or cherry tomatoes.
