Ortiz Atun Claro Ventresca, Yellowfin Tuna Belly Fillets in Olive Oil

Tin of Ortiz Atún Claro Ventresca (Yellowfin Tuna Belly) Fillets in Olive Oil - Ortiz use only bonito and yellowfin which are the 2 top grades of tuna. Yellowfin is slightly pinky in colour and a little stronger in flavour. Whole fish are cut, filleted and packed by hand on the Cantabrian coast of Spain.

The belly fillets are the most tender and delicate parts of the tuna. They come from a triangular area on the bottom of the fish near the head. This part is different because of its characteristic flavour - much more subtle and delicate flavour which make it an exquisite delicacy.

Fished with purse seine nets which carefully encircle the school of tuna. Ortiz are certified by the Earth Island Institute, whose observers on the boats assure a selective fishing method with no by-catch. The technique that is used is the purse seine that has an escape way for dolphins and other endangered species.
