Pizzoccheri - a traditional dish from the mountainous village of Valtellina in the North of Italy, this taggliatelle style pasta is made from a mixture of buckwheat flour and wheat flour.
The traditional filling recipe includes cabbage or swiss chard, potatoes, soft italian cheese, parmesan cheese, garlic and sage.
