Recado de Achiote Paste (Annatto)

Recado de Achiote Paste -  an annatto seed and spice paste for marinades. Annatto seeds, also known as achiote, have a mild, earthy flavour and bright red colour which is why they are often used as a natural food colouring.

The flavour and colour of achiote makes for a perfect marinade for meat or chicken or to colour rice dishes.

Dissolve in a little of the paste in vinegar or a mix of fresh lime and orange juice and add salt to taste. Use to marinate fish or meat before roasting, steaming or barbecuing.
