Ricciarelli - one of the pleasures of owning a shop is being able to stock the things you particularly love and these ricciarelli, which are melt in the mouth traditional Italian almond biscuits, are one of those. Try a couple of these with a glass of dessert wine - delicious!
The origin of these biscuits dates back to the Middle Ages: a curious story says that a nun of the Order of Mary’s Servants toasted Siena marzipan too much by mistake and the result were ricciarelli biscuits, toasted and curled by the high temperature, but delicate and tasty; they are prepared by grinding sugar and almonds, then adding egg white and honey; when they have been formed they are dusted with icing sugar and baked in the oven.
