Shiitake Mushrooms

Shiitake mushrooms are particularly popular in Chinese and Far-Eastern cooking, but have many other uses. Shitake mushrooms have a “meaty”, intense flavour so go well with meat, heavy sauces and stir-fries. Rehydrate in warm water for 20 minutes before using, drain but retain the water to use as a tasty stock.
