Soppressa or Ventricina Calabrese Salami - a deliciously hot Italian salami, typical of Calabria, made with coarsely ground and pressed 100% pork and spiced with ground chilli. Delicious on an antipasti platter with roasted artichokes and roasted peppers or in tasty panini.
This salami comes from the artisan Franceschini family near Modena, where pork curing is a many-century’s old tradition. The salami are freshly made on a monthly basis, preserved mainly in natural casings and matured to exacting specifications.
