Speck - a very popular traditional type of bacon/ham from the Italian alpine region of Alto Adige (South Tyrol on the border with Austria). Lightly smoked and peppered, this speck is lean, and is delicious alternative to prosciutto or try on pizza, hot toast, or as a variation on egg and bacon.
