Tamale Flour - this gluten-free ground corn (maize) flour has a strong corn flavour. This tamale flour that has been especially ground to suit tamale making. Slightly more granular than masa harina this flour will give you light and fluffy tamales, plus a great taste!
Recipe:
Mix the tamale flour with 2 1/2 cups of hot water. Beat 300g of homemade lard or a vegetable shortening such as Trex with 2 tsp Salt and 1 1/2 tsp baking powder until light and fluffy. Beat the tamale dough into the fat in 3 amounts.
Add 1 cup of cold broth and beat again. Test your dough by dropping a small piec in a glass of ice water. If it floats your tamale will be light and fluffy. Season to taste with salt. Make your tamales with your choice of filling.
