Bay Tree Caramelised Peepers - a sweet and sour (agrodolce) combination of caramelised pepper with a touch of chilli. Serve with cheese or as a pizza topping, or on a baked potato.

Spanish Omelette with Caramelised Peppers

Ingredients

• 300g New Potatoes
• 2 Yellow Peppers
• 2 Cloves of Garlic
• 1 Small Courgette
• 1 Red Onion
• 4 Large Eggs
• 1 Jar of Baytree Caramelised Peppers

Preparation instructions

1. Cook the potatoes in water until soft and drain cut into small chunks

2. Cut the peppers, onion and courgette into chunks.

3. Crush the garlic. Heat the oil in a deep non stick frying pan which is oven proof.
