Pure maple syrup is a natural sweetener made from the concentrated sap of maple trees at springtime. Only trees in the North East of the United States and Eastern Provinces of Canada are able to produce a sap sweet enough to be concentrated in to pure maple syrup. The sap is concentrated by boiling and evaporation.
During the growing season, maple trees accumulate starch. With the spring thaw, enzymes change this starch into sugar which mixes with the water absorbed through the roots, imparting a slightly sweet taste. The water contains minerals, organic acids and maple taste precursors.
Maple syrup is recognised as being one of the purest sugars available because of the little processing needed to concentrate it. Maple syrup is a valuable ingredient. It is safe for any vegetarian diet, and is regarded as a healthy sweetener which can be mixed easily with other food products.
