Vialone Nano Risotto Rice - 500g
Vialone Nano Risotto Rice - from Principato Di Lucedio where the Abbey has grown rice since the fifteenth century. It has an extraordinary capacity to absorb liquid, and hence flavour from the stock it is cooked in - it can swell to approximately twice its grown grain weight. Vialone is perfect for creamy risottos such as risotto Milanese or mushroom risotto. The small, almost rotund grains have a cooking time of 18 minutes, slightly less for al dente.
Vialone Nano has a subtler flavour than Carnaroli. Both carnaroli and vialone nano, as well as being the best rice for risotto, are very versatile in the kitchen and are good in soups, cold in any salad or steamed for typical oriental dishes (Indian or Chinese).
