Villarejo Rosemary Cheese, Curado (Mature)

Villarejo Rosemary Cheese, curado - a mature unpasteurised ewes´milk cheese from Cuenca, La Mancha . The dairy is a small family business and the milk is collected from the dairy's own herds and local farms. This is a truly artisan Manchego-style cheese with a rosemary coated rind, made with limited production, resulting in subtle and complex flavours. It has a compact paste, and is nutty with a savoury sweetness. Full, fruity, buttery and clean with a pleasing undertone of rosemary.
