Waterloo

Waterloo is made by Annie and Andy Wigmore in Risely, Berkshire. It is a rich and buttery soft cow's milk cheese that is brie-like in texture with a sweet and smooth taste. When young Waterloo is mellow and fruity but becomes more peppery with age.

Waterloo is made from unpasteurised milk from Golden Guernsey cows, originally grazed on the Duke of Wellington's estate - hence the cheese's name, but now from a single herd of pedigree Guernsey cows near Henley. Its distinctive yellow colour is due to the natural carotene in the unpasteurised Guernsey milk.
