Xanthan Gum

Xanthan Gum - widely used  in gluten free baking to improve the crumb structure and to reduce crumbling or cakes and bread, but is also used by chefs in very small amounts to thicken sauces, soups and creams.

This natural ingredient is produced by fermentation of glucose or sucrose by Xanthomonas Campestris.
