Zatar (Za'tar, Zaatar)

Zatar (or Za'tar or even Za'atar) is a Middle Eastern spice mix typically used to season fried and barbecued meats. Although the word Zaatar is simply the Arabic for "thyme", it actually combines the nutty taste of sesame with sumac and dried thyme.

Zatar is often mixed with olive oil to form a paste and then spread on pita bread, then simply crisp up in a hot oven - delicious!
