Whole Bottarga - a speciality of Sardinia, bottarga is mullet roe which has been salted and dried. Bottarga is aromatic and full of flavour. Thinly slice with salad or grate over spaghetti.
Don't think of bottarga as fish ingredient but rather as a seasoning which adds umami to your dishes. Just a little adds lots of flavour, so this piece will go a long, long way.
