Calasparra Paella Rice DOP (1kg) - Spain produces over 855,000 tons of rice every year, most of which is grown in the Valencia region. However, the very best Spanish rice in grown in tiny quantities in the village of Calasparra in the province of Murcia in South East Spain.
This paella rice is from Calasparra and is the first rice in the world to be awarded a DOP. It is grown at high altitudes by cooperatives, on ancient terraces built by the Moors, and is irrigated by the clean, cold water of the river delta. No chemicals are used during production.
Calasparra is a short, round grain rice: the starch structure gives a much moister, stickier consistency than long grain varieties. It has high absorbency, increasing in both length and width by around 70%, so is well suited to dishes where it can take in the flavours of the other ingredients.
