Harina PAN Maize Flour (Harina Precocida, Masarepa) - authentic Venezuelan white pre-cooked maize (corn) flour for making Arepas, the classic cornmeal buns from Venezuela and Colombia.
PAN is the most famous brand of arepa flour and tends to be used as the generic name for maize flour in the northern countries of South America.
To Make Arepas:
Combine 2 cups of arepa flour with 2 teaspoons of salt. Make a well in the centre and add 2½ cups warm water and gradually stir in the dry ingredients until there are no dry lumps. Let the dough rest for 5 minutes to hydrate then a few times in bowl. Divide into 8 pieces.
Roll each piece on work surface into a ball, then gently flatten to about ½ inch thick. Heat a tablespoom of oil in a large non-stick frying pan over a medium heat. Add 4 arepas, then cover and cook until golden brown (6–8 minutes). Uncover, turn the arepas over, and cook (uncovered) until other side is golden brown (another 6–8 minutes). Transfer arepas to a cooling rack and repeat with another tablespoon of oil and the remaining arepa dough.
To serve, split the arepas and stuff with your favourite filling, such as carnitas or beans and serve with a wedge of lime.
