Hoja Santa - this fragrant dried herb is widely used in Mexican, central and south American recipes giving both savoury and sweet notes to a dish. Its unusual flavour is hard to pin down and is mostly commonly described as being a bit like root beer, with hints of licorice/mint/tarragon/eucalyptus
Hoja Santa is used in both sweet and savoury dishes from hot chocolate to moles, pozole and egg dishes. Fresh leaves are also sometimes used to wrap meat, fish and tamales before cooking to infuse.
