Maseca Corn Flour for Tamales (2kg, 4.4lb)
Tamale Flour - from Maseca, the leading brand in Mexico in a large 2kg bag. This gluten-free finely ground corn (maize) flour has a strong corn flavour. The perfect corn flour for making Mexican tamales (for tortillas use our Maseca Masa Harina).
To Make Tamales:
For the dough:
6 cups Maseca Tamale Flour
1 ¼ tsp. Salt
1 tbsp. Baking powder
1 ¼ cups Lard
8 ½ cups Chicken or pork stock
For the filling:
2 ½ lbs. Chicken or pork, shredded
2 cups Red sauce
2 cups Green sauce
Needed for preparation:
Soaked corn husks
Dough: Mix the tamale flour, salt, baking powder, lard, and pork broth until the batter is light and fluffy.
Mix half of the meat with red sauce. Set aside and mix the other half of the meat with green sauce.
Take a leaf and spread a portion of batter on it. Add some of the filling and place it in the center of the batter. Close the leaf and finish wrapping the tamale with another leaf (see diagrams on the flour packet). If necessary, use 2 or 3 leaves to keep the batter in. Place the tamales vertically in a steam cooker, not too tight. Cover the steam cooker and steam for 1 hour.
