Molcajete (Mexican Stone Mortar & Pestle)
Molcajete - a traditional large, heavy-duty Mexican granite mortar and pestle. Can be used for grinding spices but in Mexico the primary use of a molcajete is for making salsa as the rough stone surface of both the mortar and pestle are perfect for breaking down the skins of chiles, tomatillos and tomatoes to make salsa or with avocados for making guacamole.
Normally when using a pestle to grind spices you would hold it in your fist and pound the spices, but when using a molcajete a different technique is needed. Place the narrower end of the pestle (tejolote in Mexico) in the palm of your hand, holding the other end in your fingers then twist and push the chillies or tomatillos against the rough bottom or sides of the inside of the mortar.
A very attractive addition to your kitchen and also a useful dish for serving salsa or guacamole at the table.
