Description

Mulato Chillies, dried - these whole chiles are brown-black in colour, and although the mulato is related to the ancho chile, it has a deeper flavour of dried fruit and tobacco with a hint of liquorice. Mulatos are part of the "Holy Trinity" of chiles, the other 2 being anchos and pasillas.

Scoville Scale : 3,000-10,000

To use these chillies simply wipe clean then cut off the stalk and stem and shake out the seeds. Open the pepper out flat and then toast it in a dry frying pan for a short time until the chilli produces a nutty smell. Remove from the the pan and soak it for 15 minutes in water that has just been boiled. Finally drain the pepper and puree it. This puree can then be added to soups, stews, sauces and salsas and most famously to mole sauces.
