Oak Smoked Alioli, La Barca
Oak Smoked Alioli (All I Oli) - a traditional Spanish creamy garlic sauce (a garlic mayonnaise) that is served throughout Spain as an accompaniment to all sorts of dishes but especially seafood including prawns, mojama, grilled squid arroz negro and paella. Try also with some Spanish white asparagus.
This aioli is made using oak-smoked olive oil from Toledo. This oil is naturally smoked over the fires that are used to dry the peppers which make Pimentón de la Vera.
