Ortiz Atun Claro (Yellowfin Tuna) Fillets in Olive Oil - premium quality as Ortiz use only bonito and yellowfin which are the 2 top grades of tuna. Yellowfin is slightly pinky in colour and a little stronger in flavour. Whole fish are cut, filleted and packed by hand on the Cantabrian coast of Spain.
Fished with purse seine nets which carefully encircle the school of tuna. Ortiz are certified by the Earth Island Institute, whose observers on the boats assure a selective fishing method with no by-catch. The technique that is used is the purse seine that has an escape way for dolphins and other endangered species.
