Ortiz Atun Claro Ventresca - the belly of yellowfin tuna in olive oil. Ventresca, or belly, has long been regarded as the best and most valuable part of the tuna. It is removed and processed separately from the rest of the fish before being cooked very gently to retain its texture and flavour.
This Yellowfin Ventresca comes in long tender flakes the high fat content of which give the tuna a deliciously melting texture and mild but rich flavour.
Fished with purse seine nets which carefully encircle the school of tuna. Ortiz are certified by the Earth Island Institute, whose observers on the boats assure a selective fishing method with no by-catch. The technique that is used is the purse seine that has an escape way for dolphins and other endangered species.
