Ortiz Ventresca Bonito Tuna - 110g
Ortiz Bonito Ventresca - the belly of this highest grade of tuna (white tuna), in olive oil. Ventresca, or belly, has long been regarded as the best and most valuable part of the tuna. It is removed and processed separately from the rest of the fish before being cooked very gently to retain its texture and flavour.
This Bonito Ventresca comes in long tender flakes the high fat content of which give the tuna a deliciously melting texture and mild but rich flavour.
Ortiz bonito is only fished in season so that the regenerative cycle is protected. It is also caught by traditional fishing boats, using rods and live bait, (pole and line), which is the most selective and ecological method, meaning there is no by-catch and the quality of the tuna meat is protected from bruising. Whole fish are cut, filleted and packed by hand on the Cantabrian coast of Spain.
