Pedro Ximenez (PX) Aged Sherry Vinegar (Sotaroni) - a 12 year old balsamic sherry vinegar from Alicante, in Spain. Produced by the Solera method and aged in oak barrels for 12 years, giving a smooth, sweet nutty finish. Similar to fine Italian balsamics but made from Pedro Ximenez Sherry rather than wine. This is a rich sweet vinegar due to the concentrated sugars in the sundried Pedro Ximenez grapes.
Try with meats, pasta, salads, or on strawberries with whipped cream or vanilla ice cream.
