Pesto Siciliana, with Ricotta & Walnuts
Pesto Siciliana - a Sicilian twist on the classic basil and pine nut pesto which also includes some of the produce of Sicily: ricotta (for a creamier sauce), tomatoes and walnuts. The delicacy of the ricotta and the unmistakable flavour of the walnuts come together in a velvety and creamy pesto.
Heat through and stir into cooked spaghetti perhaps topped with a little chopped rocket. As well as being used as a pasta sauce, Pesto Siciliana is often spread on bruschetta or croutons as a canape.
