This salchichon is made from the the meat of the black-footed (pata negra) Iberian pigs who roam freely and feed on acorns in farms around the small town of Jabugo, in Huelva, Spain. A small town famous for the quality of its Iberico Bellota Ham.. The nuttiness of the acorns comes through in the meat and fat, and even better the fat is actually good for you as it is rich in oleic acid - just like olive oil!
Current stock is dated November 2020 so there's lots of time to enjoy it.
