Vongole Sauce - a richly-flavoured, homemade-tasting clam sauce from Italy with tomatoes, white wine, garlic, parsley, rosemary and a little chilli.
The freshness of the tomatoes marries extremely well with the taste of the sea. Simply warm gently and add on top of a dish of steaming hot vermicelli.
