Torta de Aceite with Almonds (Sweet Spanish Biscuits)
Almond Torta de Aceite - light and crispy, wafer-thin traditional sweet Spanish biscuits, made from extra-virgin olive oil, and a hint of aniseed. The caramelised top is then sprinkled with crunchy chopped almonds and sugar nibs - deliciously more-ish.
This type of olive oil biscuit was first made hundred years ago to provide an easily portable snack for stagecoach passengers passing through the city of Seville. Handmade near Seville by the Gavino family who have been making these biscuits for over 100 years and their method of making has not changed over that time. The dough for each biscuit is shaped by hand so that no two biscuits look exactly the same.
