Triple Zero Pasta Flour from Molino Dallagiovanna - a very fine premium flour specially formulated for making fresh homemade pasta. This flour is very white with an ash value lower than 0.30%, due to the extraction of the innermost part of the wheat grain and a washing phase, a distinctive character of Molino Dallagiovanna. The result is pasta dough that maintains perfect hydration during kneading, and excellent strength while cooking.
Molino Dallagiovanna flour is a favourite of the chef Massimo Bottura of 3 Michelin Star, Osteria Francescana in Modena.
