Lentils from Umbria in Italy (Castelluccio Lentils) - deservedly famous throughout Italy and beyond, these brownish-green-gold lentils retain their shape when cooked and have a wonderful nutty and earthy yet delicate flavour.
In Italy these lentils are often cooked with pork, but they are also great in salads or with duck confit, and they are the traditional Italian New Year accompaniment to Zampone di Modena.
These exceptionally high quality lentils are grown by the Bartolini family, artisan producers, who have been farming in Umbria for six generations.
