White Balsamic Vinegar, Giovanni Leonardi (Balsama Bianca)
White Balsamic Vinegar (Balsama Bianco, Agrodolce Bianco) - this premium quality white balsamic is made from white grape must in exactly the same way as the more usual dark balsamic vinegars which are made from red grapes.
Use as you would regular, dark balsamic but as well as adding flavour and acidity white balsamic vinegar has the advantage of not discolouring food so it is particularly useful for dressing fish, chicken and other light coloured dishes.
Leonardi's balsamics are traditionally produced in Modena from the cooked must of Trebbiano grapes and are aged over many years in casks of precious woods (including ash, mulberry, oak, chestnut and juniper). Under no circumstances are they ever blended - inferior quality, commercial balsamics are blended with as much as 80 percent wine vinegar.
