Whole Green Cardamom Pods - Cardamom is an aromatic spice coming from a plant belonging to the ginger family.
Cardamom pods are usually green in colour, but are sometimes bleached white, although this doesn't change the flavour. Brown or black 'cardamom', are slightly larger and have a different flavour and aroma. They add a smoky note to cooked foods and are more frequently used with meat than with vegetable dishes. Cardamom is wonderfully aromatic with a warm, spicy-sweet flavour.
You can remove the seeds and grind them or grind the whole pod - ideally with pestle and mortar. If using to flavour dishes such as stews and curries, lightly crush the whole pod and add it to the mixture: the shell can be removed after cooking.
Cardamom also goes really well with chocolate and coffee-flavoured cakes & desserts.
