Zampone - this very traditional Italian meat dish is a speciality of Modena dating back to the 16th century but now very popular throughout Italy. Zampone is a traditional stuffed pig's trotter filled with 100% pork mince seasoned with spices.
It is the classic meal in Italy for New Year's Eve, but can be enjoyed all year round and makes a great store cupboard standby as it can be stored at room temperature and has a long shelf life.
Pre-cooked and packed in aluminium foil simply reheat in boiling water for 20 minutes or unwrap and heat in a microwave for 15 minutes and then serve with Umbrian lentils and pureed potatoes.
