Zita Pasta (Boccolotti) - these long, narrow tubes of pasta originate in the south of Italy where the word "Zita" means bride as zita is traditionally served at weddings. Zita is quite thick with a fairly rough texture and is typically broken by hand into uneven pieces before being put into a saucepan of boiling water to cook.
Zita is particularly popular for making oven-baked pasta recipes or for serving with dense, colourful sauces of meat, fish, vegetables or strong Italian cheeses such as pecorino, provolone or caciocavallo. Alternatively, it also excellent served with vegetable sauces prepared made with tomatoes, peppers, aubergines and courgettes.
